Slice each hoagie roll lengthwise, taking care not to cut through completely, so they open like a book.

Layer ham, salami, and roast beef evenly into each roll. Add pepperoni if using.

Top each with 2 slices of provolone or mozzarella, and add banana peppers and sautéed onions as desired.

Place assembled sandwiches on the prepared baking sheet.

Brush hoagie roll tops with melted butter and sprinkle generously with Italian seasoning.

Cover sandwiches loosely with foil and bake for 10–15 minutes, or until cheese is melted and fillings are warmed through.
