In a medium bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk everything together until well combined.

Place the chicken breasts in a large zip-lock bag or a shallow dish. Pour the marinade over the chicken, making sure all pieces are well coated. Seal the bag tightly or cover the dish with plastic wrap. Refrigerate for at least 2 hours, but preferably overnight for the best flavor.

When ready to cook, preheat your grill to medium-high heat. Remove the chicken from the marinade (discard the remaining marinade). Place the chicken breasts on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and nice grill marks appear. If using lemon slices, place them on the grill during the last few minutes to caramelize.

Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Slice the chicken, garnish with fresh chopped parsley, and serve with the grilled lemon slices on the side.
