Preheat the Blackstone grill over medium-high heat (approximately 400°F).

Spread vegetable oil evenly across the griddle surface using a spatula.

Place the filleted chicken breasts on the griddle and season with taco seasoning. Cook for 4-6 minutes until browned, then flip and cook for another 5-6 minutes until the internal temperature reaches 165°F.

After flipping the chicken, add the corn and black beans onto the griddle next to the chicken. Sauté for a few minutes to heat through.

Pour the salsa on top of the corn and black beans. Toss to coat the mixture evenly.

Spoon the corn and bean mixture on top of the chicken breasts. Sprinkle the shredded cheese evenly over the chicken.

Close the lid on the grill and let the cheese melt.

Carefully remove the chicken from the grill. Serve and enjoy!
