01 - 4 bone-in or boneless pork chops, approximately 1 inch thick
02 - 1/4 cup packed brown sugar
03 - 1 teaspoon smoked paprika
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - 1/4 teaspoon cayenne pepper (optional)
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper
09 - 2 tablespoons olive oil or butter

# Instructions:

01 - If finishing the pork chops in the oven, preheat it to 375°F (190°C).
02 - In a small bowl, mix the brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Rub the mixture generously onto both sides of the pork chops.
03 - Heat olive oil or butter in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes on each side until a golden-brown crust develops.
04 - Reduce heat to medium, cover the skillet, and cook for an additional 4–6 minutes, or until the internal temperature reaches 145°F (63°C). Alternatively, transfer the skillet to the preheated oven and bake for 5–7 minutes to finish cooking.
05 - Remove the pork chops from the skillet and let them rest for 5 minutes to redistribute the juices before serving.
06 - Deglaze the skillet with 1/4 cup chicken broth or apple juice, scraping up browned bits. Simmer for 2 minutes and drizzle the sauce over the chops.
