Chicken with Buttered Noodles (Print Version)

# Ingredients:

→ For the Chicken

01 - 4 boneless, skinless chicken breasts
02 - 1 tablespoon olive oil
03 - Salt, to taste
04 - Freshly ground black pepper, to taste
05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - 1 teaspoon dried thyme or preferred dried herb

→ For the Noodles

08 - 225 grams egg noodles or preferred pasta
09 - 4 tablespoons unsalted butter
10 - 2 tablespoons olive oil
11 - 1 teaspoon garlic, minced
12 - 0.5 teaspoon salt, or to taste
13 - Freshly ground black pepper, to taste
14 - Fresh parsley or basil, chopped, for garnish (optional)

# Instructions:

01 - Bring a large pot of salted water to a boil. Add egg noodles and cook until al dente, approximately 8 to 10 minutes. Drain, reserving a small amount of cooking water.
02 - While noodles cook, pat chicken breasts dry and season both sides with salt, black pepper, garlic powder, onion powder, and dried thyme.
03 - Heat olive oil in a large skillet over medium-high heat. Place chicken breasts in the skillet and cook for 6 to 7 minutes per side, or until golden brown and the internal temperature reaches 75°C. Remove from skillet and let rest a few minutes.
04 - In the same skillet, melt unsalted butter with olive oil over medium heat. Add minced garlic and sauté for 1 to 2 minutes until aromatic.
05 - Add drained noodles to the skillet. Toss thoroughly in the butter and garlic mixture, adding reserved pasta water as needed for desired consistency.
06 - Season noodles with salt and black pepper to taste. Toss to combine.
07 - Slice the rested chicken breasts. Arrange buttered noodles on plates, top with sliced chicken, and garnish with fresh parsley or basil if desired. Serve immediately.

01 - For enhanced flavor, add a splash of lemon juice or zest to the noodles before serving.
02 - Boneless, skinless chicken thighs can be substituted for a juicier result.
03 - Experiment with different herbs such as rosemary, oregano, or fresh basil for variety.
04 - Using pre-cooked rotisserie chicken further reduces preparation time.
