Chicken Zucchini Stir Fry (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 lb boneless chicken thigh, cut into bite-sized pieces
02 - 3 cloves garlic, smashed
03 - 1 medium zucchini, halved lengthwise and sliced

→ Marinade

04 - 1 tsp cornstarch
05 - 1/4 cup light soy sauce
06 - 1 tsp sesame oil
07 - 2 tsp sugar or honey
08 - 1 tbsp rice wine vinegar (optional)

→ Stir Fry Sauce

09 - 1 tbsp cooking oil
10 - 1 tbsp oyster sauce
11 - Ground black pepper (optional)

# Instructions:

01 - Cut the chicken into bite-sized pieces and place in a mixing bowl. Add cornstarch, light soy sauce, sesame oil, sugar (or honey), and rice wine vinegar (optional). Mix thoroughly and let it marinate for 30 minutes.
02 - Heat 1 tablespoon of cooking oil in a pan or wok over medium-high heat.
03 - Add smashed garlic and the marinated chicken (including the marinade) to the pan. Stir fry for about 2 minutes, or until the chicken is no longer translucent. Remove the chicken from the pan and set aside on a plate or bowl, leaving the sauce in the pan.
04 - Add more cooking oil if the pan is too dry, then add the zucchini. Stir fry for about 5 minutes, or until the zucchini begins to soften.
05 - Return the cooked chicken to the pan with the zucchini. Add oyster sauce and ground black pepper (optional). Stir fry for an additional 2-3 minutes, or until the chicken is fully cooked and the zucchini is tender.
06 - Remove from heat and serve the stir-fry hot, either with white rice or noodles.
