Cut the chicken into bite-sized pieces and place in a mixing bowl. Add cornstarch, light soy sauce, sesame oil, sugar (or honey), and rice wine vinegar (optional). Mix thoroughly and let it marinate for 30 minutes.

Heat 1 tablespoon of cooking oil in a pan or wok over medium-high heat.

Add smashed garlic and the marinated chicken (including the marinade) to the pan. Stir fry for about 2 minutes, or until the chicken is no longer translucent. Remove the chicken from the pan and set aside on a plate or bowl, leaving the sauce in the pan.

Add more cooking oil if the pan is too dry, then add the zucchini. Stir fry for about 5 minutes, or until the zucchini begins to soften.

Return the cooked chicken to the pan with the zucchini. Add oyster sauce and ground black pepper (optional). Stir fry for an additional 2-3 minutes, or until the chicken is fully cooked and the zucchini is tender.

Remove from heat and serve the stir-fry hot, either with white rice or noodles.
