07 - 115 grams unsalted butter, melted
08 - 0.5 teaspoon vanilla extract
09 - 1 large or 2 small tart apples, peeled and chopped

→ Cake Base

10 - 60 grams unsalted butter, softened
11 - 100 grams granulated sugar
12 - 1 large egg
13 - 1 teaspoon vanilla extract
14 - 120 grams sour cream
15 - 125 grams all-purpose flour
16 - 0.25 teaspoon baking soda
17 - 0.25 teaspoon fine sea salt
18 - 0.5 teaspoon baking powder

→ Apple Cider Glaze

19 - 60 grams powdered sugar
20 - 22–30 millilitres apple cider

# Steps to Follow:

01 - Preheat oven to 175°C. Grease a 20 cm springform pan and line the base with parchment paper.
02 - In a medium bowl, whisk together flour, brown sugar, granulated sugar, salt, cinnamon, and nutmeg. Add melted butter and vanilla extract. Stir until mixture forms moist crumbs. Set aside.
03 - In a large mixing bowl, cream softened butter with granulated sugar until pale and fluffy. Beat in egg until fully incorporated. Add vanilla extract and sour cream; mix until smooth.
04 - In a separate bowl, stir together flour, baking soda, salt, and baking powder. Add dry ingredients to the butter mixture and stir gently until just combined.
05 - Spread half of the cake batter evenly in the prepared tin. Distribute apple pieces evenly over the batter. Sprinkle approximately half of the cinnamon streusel crumbs over the apples.
06 - Gently spread the remaining cake batter over the crumbs. Top with the remaining streusel, distributing evenly across the surface.
07 - Transfer to oven and bake for 35–40 minutes, or until a cake tester inserted into the centre emerges clean.
08 - Remove from oven and run a thin knife around the edge to loosen. Allow cake to cool before unclasping the pan ring.
09 - In a small bowl, whisk powdered sugar with apple cider until a smooth, pourable glaze forms. Drizzle over the cooled cake before serving.

# Additional Notes:

01 - For optimal texture, use tart apples such as Granny Smith and ensure all ingredients are at room temperature before beginning.
