# Ingredients:

→ For the Cucumbers

01 - 2 medium cucumbers (English or Persian), thinly sliced or cut into spears
02 - 1/2 teaspoon salt
03 - 1 teaspoon sesame seeds
04 - 1 tablespoon chopped fresh cilantro or green onions

→ For the Spicy Peanut Sauce

05 - 2 tablespoons creamy peanut butter
06 - 1 tablespoon soy sauce or tamari
07 - 1 tablespoon rice vinegar
08 - 1 teaspoon honey or maple syrup
09 - 1 teaspoon sriracha or chili garlic sauce
10 - 1 teaspoon sesame oil
11 - 1 clove garlic, minced
12 - 1/2 teaspoon grated fresh ginger
13 - 1-2 tablespoons water

# Instructions:

01 - Slice cucumbers into thin rounds or spears. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture. Pat dry with a paper towel.
02 - In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, garlic, and ginger. Add water as needed until the sauce is smooth and pourable.
03 - Drizzle the peanut sauce over the cucumbers and toss gently to coat. Garnish with sesame seeds and chopped cilantro or green onions. Serve immediately or refrigerate for 10 minutes to let the flavors meld.

# Notes:

01 - Make it crunchier by adding crushed peanuts or cashews on top.
02 - Spice it up with extra sriracha or red pepper flakes.
03 - For a low-carb option, swap honey for a keto-friendly sweetener.
