Combine shredded coconut, melted coconut oil, maple syrup, vanilla, and salt in a food processor. Pulse until the mixture sticks together and becomes slightly creamy, about 30–60 seconds.

Scoop out heaping tablespoons and form into small rectangles or balls. Place on a parchment-lined tray. Freeze for 15–20 minutes until firm.

Melt dark chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.

Dip each coconut bite in melted chocolate, or drizzle the chocolate over the tops. Return to the tray and sprinkle with extra sea salt or coconut if desired.

Place the bites back in the freezer for 10–15 minutes to set. Store in the fridge for up to 2 weeks or freeze for longer storage.
