Dark Chocolate Coconut Bites (Print Version)

# Ingredients:

01 - 1 1/2 cups unsweetened shredded coconut
02 - 1/4 cup coconut oil, melted
03 - 1/4 cup maple syrup or honey
04 - 1/2 teaspoon vanilla extract
05 - Pinch of sea salt
06 - 4 oz dark chocolate (dairy-free if needed), chopped or in chips
07 - Optional: extra sea salt or coconut for sprinkling

# Instructions:

01 - Combine shredded coconut, melted coconut oil, maple syrup, vanilla, and salt in a food processor. Pulse until the mixture sticks together and becomes slightly creamy, about 30–60 seconds.
02 - Scoop out heaping tablespoons and form into small rectangles or balls. Place on a parchment-lined tray. Freeze for 15–20 minutes until firm.
03 - Melt dark chocolate in a microwave-safe bowl or over a double boiler, stirring until smooth.
04 - Dip each coconut bite in melted chocolate, or drizzle the chocolate over the tops. Return to the tray and sprinkle with extra sea salt or coconut if desired.
05 - Place the bites back in the freezer for 10–15 minutes to set. Store in the fridge for up to 2 weeks or freeze for longer storage.

# Notes:

01 - Use a silicone mold for uniform shapes.
02 - Add almond or cashew butter for a richer filling.
03 - Make it sweeter by adding a bit more maple syrup to the coconut base.
