Easy Vegetarian Tea Sandwich (Print Version)

# Ingredients:

01 - 12 slices wholegrain bread
02 - 1 cup shredded carrots
03 - 1 cup shredded purple cabbage
04 - 1/2 cup green avocado cilantro dressing
05 - 1.5 cups low-fat yogurt
06 - Salt to taste
07 - Black pepper, optional
08 - Herbs such as mint, basil, dill, optional

# Instructions:

01 - Gather all ingredients. Shred the carrots and purple cabbage. Strain the yogurt to remove excess liquid. Prepare the avocado cilantro dressing in a mixer. Optionally, trim the edges of the bread slices.
02 - Divide the yogurt into two bowls. Mix half with the shredded carrots in one bowl and the other half with shredded purple cabbage in another bowl. Season both with salt and black pepper, if desired.
03 - Take four slices of bread for each sandwich stack. Spread the carrot mixture on the first slice, the purple cabbage mixture on the second slice, and the green avocado cilantro dressing on the third slice. Optionally, add fresh herbs during assembly.
04 - Stack the prepared slices one above the other and place the fourth slice on top. Cut the sandwich diagonally to make two halves. Optionally, cut each half diagonally again to create four smaller bite-sized sandwiches. This recipe yields 12 mini sandwiches in total.
