Garlic Butter Steak Bites (Print Version)

01 - 1 tablespoon olive oil
02 - 2 tablespoons butter
03 - 1 lb baby red and yellow potatoes, cut into ½ inch cubes
04 - 3 large garlic cloves, minced
05 - 1 teaspoon fresh parsley, chopped
06 - 1 teaspoon fresh thyme, chopped
07 - 1 teaspoon fresh rosemary, chopped
08 - ¼-½ teaspoon red pepper flakes, depending on taste
09 - 1-1 ¼ lb sirloin steak, cut into one-inch cubes
10 - Salt and pepper, to taste

# Instructions:

01 - Heat a large skillet over medium heat and melt one tablespoon of butter with ½ tablespoon of olive oil. Once the butter has melted, add the potatoes, garlic, chopped herbs, and red pepper flakes. Cook for 5-6 minutes until tender but still firm. Season with salt and pepper to taste. Remove potatoes and place them on a plate.
02 - Discard any burnt garlic and herbs from the skillet. Increase heat to high. When the skillet starts to smoke, add the other ½ tablespoon of olive oil and the second tablespoon of butter.
03 - Add steak bites to the skillet and sear for about one minute without moving them to get a nice sear. Continue cooking until browned on all sides and cooked to desired doneness (4-6 minutes). Season with salt and pepper to taste.
04 - Return the cooked potatoes to the skillet. Cook for an additional minute until heated through before serving.
