Garlic Butter Steak and Potatoes (Printable Version)

Tender steak and golden potatoes cooked in garlic butter.

# What You'll Need:

01 - ¼ cup ghee or butter, divided
02 - 1 tablespoon olive oil
03 - 1 lb yukon gold potatoes, cut into ½ inch cubes
04 - 3 garlic cloves, minced
05 - 1 teaspoon dried thyme
06 - ½ teaspoon dried oregano
07 - ½ teaspoon sea salt, plus more to taste
08 - ¼ teaspoon ground black pepper, plus more to taste
09 - 1 ¼ lb sirloin steak, cut into ½ inch cubes

# Steps to Follow:

01 - Heat a large cast iron skillet over medium heat. Add olive oil and two tablespoons of ghee to the pan.
02 - Once the ghee is melted, add the potatoes and sprinkle garlic, thyme, oregano, salt, and pepper over them. Cook for 2-3 minutes before stirring. Continue cooking while stirring frequently until potatoes are golden brown and fork-tender, about 8-10 minutes. Remove potatoes and browned bits from the pan and set aside.
03 - Increase the heat to medium-high and add the remaining two tablespoons of ghee to the pan. Once melted, add steak pieces and season with a dash of salt and pepper. Cook undisturbed for at least 2 minutes to create a good sear. Stir and continue cooking until golden brown, about 1-2 minutes.
04 - Add the potatoes back to the pan and stir to combine. Adjust salt and pepper to taste. Top with freshly chopped parsley. Serve and enjoy.

# Additional Notes:

01 - Cut the potatoes small and evenly to ensure even cooking.
02 - Do not stir the steak too early to allow proper searing.
