# What You'll Need:

01 - 4 tablespoons low sodium soy sauce
02 - 1 tablespoon sesame oil
03 - 1 teaspoon hot sauce

→ Main Ingredients

04 - 1 tablespoon vegetable oil, divided
05 - 1 red bell pepper, diced, ribs and seeds removed
06 - 2 cups ham, diced
07 - 2 green onions, diced, white and green parts separated
08 - 3 cloves garlic, minced
09 - 5 cups cooked white rice, cold
10 - 3 large eggs
11 - 1 cup pineapple pieces

# Steps to Follow:

01 - Combine soy sauce, sesame oil, and hot sauce in a bowl. Mix thoroughly and set aside.
02 - Heat 0.5 tablespoon vegetable oil in a large non-stick skillet over medium-high heat. Add diced red bell pepper and cook for 5 to 7 minutes until crisp-tender. Add diced ham and the white portion of the green onions, cooking until the ham is lightly browned. Stir in minced garlic and sauté for 1 minute. Transfer this mixture to a bowl and set aside.
03 - Pour the remaining vegetable oil into the same skillet and heat. Add cold cooked rice and break up any clumps with a spatula. Stir-fry rice for approximately 8 minutes until thoroughly heated.
04 - Push rice to one side of the skillet. Crack eggs into the empty side, gently scramble them, and cook until set.
05 - Fold scrambled eggs and reserved ham mixture into the rice. Drizzle the prepared sauce over the rice and stir well to combine, cooking until everything is uniformly heated.
06 - Remove skillet from heat. Gently fold in pineapple pieces and the green part of the onions. Serve immediately.
