Healthy Zucchini Brownies (Print Version)

01 - 2 cups finely grated zucchini, firmly packed
02 - 1 cup brown sugar
03 - 1 1/3 cups unsweetened applesauce
04 - 2 eggs
05 - 2 teaspoons vanilla extract
06 - 2/3 cup oat flour or all-purpose flour
07 - 1 cup unsweetened cocoa powder
08 - 2 teaspoons baking soda
09 - 1 1/2 teaspoons baking powder
10 - 1/2 teaspoon ground cinnamon
11 - 1/2 teaspoon salt

→ Optional Add-ins

12 - 1 cup chocolate chips
13 - 1 cup chopped nuts

→ Optional Frosting

14 - 1/2 cup chocolate chips
15 - 1/2 cup butterscotch chips
16 - 1/2 cup peanut butter
17 - Nutella, as needed

# Instructions:

01 - Preheat the oven to 350ºF and grease a 9x13 inch pan.
02 - Mix together the grated zucchini, brown sugar, applesauce, eggs, and vanilla extract in a large bowl.
03 - Stir together the flour, cocoa powder, baking soda, baking powder, cinnamon, and salt in a separate bowl, then gradually add to the wet ingredients and mix until just combined.
04 - If using, fold in the chocolate chips and nuts.
05 - Pour the batter into the prepared pan and bake for approximately 55 minutes, or until a toothpick inserted into the center comes out clean.
06 - If desired, melt chocolate chips, butterscotch chips, and peanut butter together for frosting or spread Nutella on top of the cooled brownies.
