01 - 8 slices challah or brioche bread, sliced 3/4-inch thick
02 - 3 large eggs
03 - 3 egg yolks
04 - 1 1/2 cups whole milk
05 - 1 teaspoon grated orange zest (optional)
06 - 1 teaspoon vanilla extract
07 - 2 tablespoons brown sugar
08 - 1/4 teaspoon fine sea salt

# Instructions:

01 - Preheat the oven to 250°C. Place the slices of bread on a sheet pan in the oven to dry out slightly for no more than 15 minutes.
02 - In a large shallow bowl, whisk together the eggs, yolks, milk, orange zest, vanilla, sugar, and salt. Soak as many bread slices as possible in the egg mixture for 4 to 5 minutes, turning once.
03 - Heat 1 tablespoon of butter and 1 tablespoon of oil in a large sauté pan or griddle over medium heat. Add the soaked bread and cook for 2 to 3 minutes per side until well browned. Place the cooked French toast on a sheet pan and keep warm in the oven.
04 - Fry the remaining soaked bread slices, adding more butter and oil as needed, until all slices are cooked.
05 - Serve hot topped with maple syrup, fresh fruit, and extra butter if desired.

# Notes:

01 - Drying out the bread in the oven helps it soak up more egg mixture without becoming soggy.
02 - Avoid over-soaking the bread to prevent it from falling apart.
