Add diced red onion and sauté for 2 to 3 minutes until slightly softened.

Stir in minced garlic, ground beef, dried oregano, ground cumin, salt, and black pepper. Cook, breaking up the beef, until browned and crumbled, about 6 to 8 minutes.

Add the red bell pepper and chopped zucchini. Stir and cook for 5 to 6 minutes until the vegetables are just tender.

Stir in baby spinach or kale and cook for 1 to 2 minutes until wilted.

Finish with a squeeze of fresh lemon juice. Adjust salt and pepper to taste. Serve warm with feta, olives, parsley, or tahini as desired.
