Heat oven to 177°C. Lightly grease 16 cups of a mini muffin pan.

Spoon 2 teaspoons of shredded mozzarella cheese into each prepared muffin cup. Gently press cheese down into the cups.

Place 3 mini pepperoni slices on top of the cheese in each cup, then sprinkle a small amount of Italian seasoning over each.

Bake in preheated oven for 8 minutes, until cheese edges turn deep golden brown.

Allow chips to cool slightly, then carefully remove from pan. Serve warm, optionally accompanied by marinara sauce.
