Rotel Dip with Ground Beef (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 lb ground beef
02 - 1 can (10 oz) Rotel diced tomatoes with green chilies
03 - 1 block (8 oz) cream cheese, softened
04 - 2 cups shredded cheddar cheese
05 - 1 cup sour cream
06 - 1 packet taco seasoning mix
07 - 1 tablespoon olive oil

# Instructions:

01 - Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
02 - Drain any excess fat from the beef and return it to the skillet. Stir in the taco seasoning mix and Rotel tomatoes (with juices), then let it simmer for about 3-5 minutes.
03 - Reduce the heat to low and add the cream cheese, stirring constantly until fully melted and smooth.
04 - Mix in the shredded cheddar cheese and sour cream, stirring until the cheese is melted and the dip is smooth and creamy.
05 - Serve warm with tortilla chips, crackers, or your favorite dipping snacks.

# Notes:

01 - To make it spicier, use hot Rotel or add jalapeños.
02 - For a vegetarian option, replace ground beef with black beans or a plant-based meat alternative.
03 - You can swap cheeses for variations such as Monterey Jack, mozzarella, or pepper jack.
04 - If the dip becomes too thick when reheating, add a splash of milk or cream.
