01 - 1 cup peaches, peeled and diced
02 - 1/2 cup vegetable oil
03 - 1/2 cup sugar
04 - 2 eggs
05 - 1/2 cup sour cream
06 - 1 teaspoon vanilla extract

08 - 1 teaspoon baking soda
09 - 1/2 teaspoon salt

# Instructions:

01 - Preheat oven to 350°F (175°C) and spray 3 mini loaf pans or 1 large loaf pan.
02 - In a medium bowl, combine the peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract.
03 - Stir in the flour, baking soda, and salt, mixing until just combined.
04 - Pour the batter evenly into the prepared pans.
05 - Place pans in the preheated oven and bake for 25-30 minutes if using mini loaf pans, or 50-55 minutes for a large loaf.
06 - Remove from oven and allow to cool slightly before slicing and enjoying.
