Spicy Honey-Ginger Chicken Bowls (Printable Version)

# What You'll Need:

→ Chicken

01 - 680 g boneless, skinless chicken breasts or thighs
02 - 1 tablespoon tamari or soy sauce
03 - 1 tablespoon orange juice
04 - Black pepper, to taste
05 - 1 tablespoon cornstarch or arrowroot powder
06 - 2 tablespoons extra virgin olive oil

→ Honey-Ginger Sauce

07 - 80 ml tamari or soy sauce
08 - 30 ml orange juice
09 - 60 ml honey
10 - 2–3 tablespoons chili paste
11 - 1 tablespoon fresh ginger, finely chopped
12 - 2 cloves garlic, finely chopped

→ Yum Yum Sauce

13 - 80 ml olive oil mayonnaise
14 - 2 tablespoons ketchup
15 - 1 tablespoon Worcestershire sauce
16 - 1 teaspoon seasoned salt
17 - 0.25 teaspoon cayenne pepper

→ For Serving

18 - 750–1000 ml cooked rice
19 - Sliced cucumber
20 - Sliced avocado
21 - Kimchi
22 - Fried wontons

# Steps to Follow:

01 - Set the oven to 220°C and allow it to fully preheat.
02 - On a large baking sheet, toss chicken with 1 tablespoon tamari and 1 tablespoon orange juice. Season with black pepper. Sprinkle cornstarch or arrowroot powder over the chicken and gently toss to coat. Drizzle with extra virgin olive oil. Bake for 15 minutes.
03 - In a bowl, whisk together 80 ml tamari, 30 ml orange juice, honey, chili paste, chopped garlic, and chopped ginger until combined.
04 - After 15 minutes of baking, remove the chicken and pour two-thirds of the prepared sauce over it. Toss to coat and return to the oven for a further 5 minutes or until thoroughly cooked. For a charred finish, broil for 1–2 additional minutes. Drizzle remaining sauce over cooked chicken if desired.
05 - In a small bowl, combine olive oil mayonnaise, ketchup, Worcestershire sauce, seasoned salt, and cayenne pepper. Adjust seasoning to taste if needed.
06 - Divide cooked rice between serving bowls. Arrange sliced chicken, cucumber, avocado, kimchi, and fried wontons over rice. Spoon yum yum sauce over assembled ingredients before serving.

01 - For best results, slice the chicken against the grain after baking for enhanced tenderness.
