Arrange chicken breasts on a cutting board and drizzle with olive oil or avocado oil.

In a small bowl, combine paprika, 0.5 teaspoon salt, garlic powder, and onion powder. Evenly sprinkle the seasoning mix over both sides of each chicken breast.

With a sharp knife, carefully cut a deep pocket into the side of each chicken breast. Set aside.

In a mixing bowl, blend the softened cream cheese, grated Parmesan, mayonnaise, chopped spinach, minced garlic, red pepper flakes, and remaining 0.5 teaspoon salt until well incorporated.

Evenly spoon the spinach cheese mixture into the pocket of each chicken breast.

Arrange stuffed chicken breasts in a 23x33 cm baking dish. Bake uncovered for 25 to 30 minutes or until the chicken is thoroughly cooked and no longer pink in the centre.
