Preheat oven to 190°C. Rub olive oil evenly over chicken breasts, and season each with salt and black pepper.

Heat a skillet over medium-high heat. Sear the chicken breasts until golden brown on both sides, approximately 5 minutes per side.

Add minced garlic to the skillet and cook for 30 seconds until aromatic. Pour in chicken broth, scraping the browned bits from the bottom of the pan. Let simmer briefly.

Reduce heat to medium. Stir in sour cream, mixing until the sauce is smooth. Allow the mixture to bubble gently for about 5 minutes.

Transfer the chicken breasts into a baking dish if needed. Evenly distribute shredded Jack cheese over each breast and pour the sauce over. Bake for 15 minutes or until the cheese is melted and bubbling.
