Tilapia In Roasted Pepper Sauce (Printable Version)

01 - 450 g tilapia fillets
02 - 45 g unsalted butter
03 - 1 medium onion, finely diced
04 - 2 garlic cloves, minced
05 - 170 g roasted red peppers, chopped
06 - 170 g roasted red peppers, pureed
07 - 180 ml heavy cream
08 - 50 g Parmesan cheese, finely grated
09 - Salt, to taste
10 - Freshly ground black pepper, to taste

11 - Fresh parsley, chopped, for garnish
12 - Additional Parmesan cheese, to garnish

# Steps to Follow:

01 - Melt 30 g of butter in a large non-stick skillet over medium heat. Season tilapia fillets with salt and black pepper, then fry for 3-4 minutes per side until the fish flakes easily and develops a light golden crust. Remove fillets from skillet and set aside.
02 - To the same skillet, add the remaining 15 g of butter and diced onion. Sauté for 5 minutes, stirring frequently, until onion is softened. Add minced garlic and continue cooking for 1 minute until fragrant.
03 - Stir in chopped and pureed roasted red peppers. Cook for 5 minutes, allowing the peppers to meld with the aromatics.
04 - Reduce heat to low. Add heavy cream and 50 g grated Parmesan cheese. Stir to combine and cook gently until the cheese is incorporated. Taste and adjust seasoning with additional salt if needed. Remove skillet from heat.
05 - Return cooked tilapia fillets to the skillet, spooning sauce generously over the top. Allow the fish to warm through for 1-2 minutes.
06 - Transfer tilapia and sauce onto serving plates. Garnish with freshly chopped parsley and extra Parmesan cheese before serving.
