# What You'll Need:

→ Main

01 - 450 g boneless, skinless chicken breasts, thinly sliced
02 - 15 ml olive oil
03 - 75 g onion, chopped
04 - 425 g canned pineapple chunks, drained
05 - 60 ml soy sauce
06 - 60 ml honey
07 - 60 ml rice vinegar
08 - 1 clove garlic, minced
09 - 0.25 g red pepper flakes (optional)

→ For Serving

10 - 400 g cooked rice

# Steps to Follow:

01 - Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook for 5–7 minutes until golden and fully cooked through. Remove chicken from the skillet and set aside.
02 - In the same skillet, add chopped onion and sauté for 3–4 minutes until softened and translucent.
03 - Add pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes to the skillet. Simmer for 2–3 minutes, stirring occasionally, to blend the flavors.
04 - Return the cooked chicken to the skillet. Toss to coat thoroughly in the sauce and pineapple mixture. Simmer for an additional 2–3 minutes to allow the flavors to meld.
05 - Spoon the pineapple chicken mixture over hot cooked rice and serve immediately.

# Additional Notes:

01 - For added heat, increase red pepper flakes or stir in a dash of sriracha.
02 - Incorporate chopped bell peppers or snap peas for extra vegetables and color.
03 - Suitable for meal prep; the dish reheats excellently when made in advance.
