Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook for 5–7 minutes until golden and fully cooked through. Remove chicken from the skillet and set aside.

In the same skillet, add chopped onion and sauté for 3–4 minutes until softened and translucent.

Add pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes to the skillet. Simmer for 2–3 minutes, stirring occasionally, to blend the flavors.

Return the cooked chicken to the skillet. Toss to coat thoroughly in the sauce and pineapple mixture. Simmer for an additional 2–3 minutes to allow the flavors to meld.
