Ube Pancakes Coconut Sauce (Print Version)

# Ingredients:

→ Ube Pancakes

01 - 1 cup pancake mix (+ other ingredients according to the package instructions)
02 - 1 teaspoon ube extract
03 - 1/4 cup ube halaya (ube jam or mashed ube)
04 - Butter, as needed

→ Ube Coconut Sauce

05 - 1/2 cup coconut cream
06 - 1/2 cup condensed milk
07 - 1/2 teaspoon ube extract

# Instructions:

01 - Make the batter according to the package instructions of your favorite pancake mix. In a bowl, mix together the wet ingredients. In a separate bowl, mix the dry ingredients. Add the dry ingredients into the wet mixture, stirring just until combined. Do not over-mix to maintain light and fluffy pancakes—some lumps are acceptable.
02 - Heat a nonstick pan or griddle on medium heat. Use butter as needed to prevent sticking. Scoop about 1/4 to 1/3 cup of batter into the pan or griddle. Cook the pancakes until bubbles form, then flip and cook until golden brown for about 2 minutes on each side.
03 - In a small saucepan over low to medium heat, combine coconut cream, condensed milk, and ube extract. Stir until the mixture is well combined and heated through. Taste and adjust to your preference. Let the sauce cool; it will thicken slightly as it cools.
04 - Serve the pancakes with ube coconut sauce and your favorite toppings, such as fresh berries, mint, coconut flakes. Enjoy!
