Preheat oven to 200°C. Arrange two racks near the middle. Lightly brush both sides of each tortilla with olive oil and place in a single layer on a parchment-lined baking sheet. Bake for 10–12 minutes, flipping halfway, until golden and crisp. Remove and set aside.

Heat refried beans in a small saucepan over low heat. For a softer consistency, stir in a splash of water as needed.

Fry or scramble the eggs according to your preference. Season with a pinch of salt and pepper.

Spread refried beans over each crisp tortilla. Sprinkle with grated cheddar cheese. Top with a cooked egg. Add a spoonful of pico de gallo, draining excess liquid with a slotted spoon.

Garnish tostadas with avocado slices, hot sauce, and crumbled cheese as desired before serving.
