Flourless Brownies Gluten Free (Print Version)

# Ingredients:

01 - 8 ounces dark chocolate, chopped
02 - 1 cup salted butter (2 sticks)
03 - 4 large eggs
04 - 1 cup granulated white sugar
05 - 1 teaspoon vanilla extract
06 - 1/4 cup cocoa powder

# Instructions:

01 - Preheat the oven to 350 degrees F. Spray an 8 or 9 inch square pan with nonstick spray or line with parchment paper and spray the parchment. An 8 inch pan will yield thicker brownies.
02 - Combine the chocolate and butter in a saucepan over low heat, stirring often until melted and smooth. Remove from heat and let cool slightly.
03 - In a large bowl, use a hand mixer to beat the eggs and sugar together until thick. Mix in the vanilla, and then gradually mix in the melted chocolate. Finally, mix in the cocoa powder.
04 - Scrape the batter into the prepared pan and spread it into an even layer. Bake for 30 to 35 minutes or until the center is just set. Cool completely before cutting.
05 - Refrigerate the brownies to chill before cutting, as they cut better when well chilled.

01 - Ensure chocolate and vanilla extract brands are gluten-free if making this dish GF.
02 - Store in a covered container for 1-2 days, or freeze in a covered container to enjoy over a couple of weeks.
