In a medium bowl, mash one banana. Add in the yogurt and honey (if using). Stir until the mixture is fully combined.

Pour the yogurt mixture onto the prepared baking sheet and spread evenly with a knife or spatula, creating a smooth layer.

Swirl the peanut butter on top of the yogurt mixture and sprinkle with mini chocolate chips. If the peanut butter is too thick, warm it in the microwave in 20-second intervals. Slice the remaining banana and place the pieces as toppings.

Place the baking sheet in the freezer for at least 5 hours, ensuring the yogurt bark is frozen solid.
