05 - 1 batch homemade turkey breakfast sausage (yields 6 patties, approximately 1/3 cup each)
06 - 1 teaspoon olive oil, for cooking

07 - 3 slices cheddar cheese, halved
08 - 3 slices pepper jack cheese, halved
09 - 6 English muffins, halved

# Steps to Follow:

01 - Preheat oven to 180°C. Lightly coat silicone muffin top pan with olive oil spray. Whisk eggs in a measuring jug until thoroughly scrambled. Evenly divide egg mixture into six wells of the pan, seasoning each with a pinch of salt and pepper. Bake for 10 minutes, rotating the pan halfway through, until eggs are just set.
02 - Divide turkey sausage mixture into six portions (approximately 1/3 cup each). Roll into balls, then press each between two sheets of wax paper using a mallet or flat-bottomed glass to form patties.
03 - Heat olive oil in a skillet over medium to medium-high heat. Working in batches, cook patties for 3–4 minutes per side or until browned and cooked through. Transfer to a plate lined with paper towel. Cool completely if preparing for freezing.
04 - If consuming immediately, lightly toast English muffin halves. If freezing, skip toasting to maintain texture.
05 - Layer the bottom half of each English muffin with one egg round, a sausage patty, and half a slice each of cheddar and pepper jack cheese. Complete with the muffin top. For immediate serving, microwave assembled sandwich for 15–20 seconds until cheese melts.
06 - Allow all components to reach room temperature before assembly for freezing. Wrap assembled sandwiches in paper towel and cling film, then store in freezer-safe bags or containers. To reheat from frozen, thaw overnight in the refrigerator. Remove plastic wrap, keep in paper towel, and microwave for 60–85 seconds or until thoroughly warmed.
