Strawberries and Cream Cake (Print Version)

# Ingredients:

→ Vanilla Cake

01 - 150 g all purpose flour
02 - 1 ¼ tsp baking powder
03 - ½ tsp salt
04 - 175 g granulated sugar
05 - 85 g unsalted butter, cubed, room temperature
06 - 25 g vegetable oil
07 - 1 tbsp vanilla extract
08 - 60 g sour cream, room temperature
09 - 100 g whole milk, room temperature
10 - 2 egg whites, room temperature

→ Vanilla Pudding

11 - 1 packet instant vanilla pudding mix (96 g)
12 - 335 g heavy whipping cream
13 - 115 g whole milk
14 - 7-8 fresh strawberries, halved (½ lb)

→ Whipped Cream

15 - 225 g heavy whipping cream
16 - 2 tbsp granulated sugar
17 - 1 tsp vanilla bean paste
18 - ⅛ tsp salt
19 - 225 g strawberries, for topping (½ lb)

# Instructions:

01 - Preheat oven to 175°C. Butter a 7-inch springform pan and coat the inside with sugar. In a bowl, combine flour, baking powder, salt, sugar, and cubed butter. Beat until no lumps remain. Add oil, vanilla, sour cream, and milk, whisking until smooth. Separately, beat egg whites to stiff peaks. Fold into batter. Pour into prepared pan and bake for 35-45 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool in pan for 15 minutes before transferring to a rack.
02 - Mix instant vanilla pudding mix with heavy cream and milk in a bowl. Whisk for 2 minutes, then chill in the refrigerator. Once cake has cooled, slice horizontally into two even layers. Optionally brush the insides with milk if dry. Place bottom layer in pan, arrange halved strawberries around edges upright, ensuring they are short enough for the top layer to sit flat. Fill center with pudding, spreading evenly and into strawberry crevices. Add top layer of cake and press slightly. Chill while making whipped cream.
03 - In a bowl, beat heavy cream, sugar, vanilla, and salt until soft peaks form. Remove cake from fridge and pan. Spread whipped cream on top and decorate with extra strawberries. Slice and serve.

# Notes:

01 - If cake seems dry, brushing with milk before adding pudding may improve texture.
02 - Store leftover cake in an airtight container in the fridge to maintain freshness.
