Strawberry Pie Bars Dessert (Print Version)

# Ingredients:

→ For the Crust and Crumb

01 - 2 cups all-purpose flour
02 - 3/4 cup granulated sugar
03 - 1/2 teaspoon salt
04 - 1 teaspoon baking powder
05 - 1 cup cold unsalted butter, cubed
06 - 2 cups old-fashioned oats

→ For the Strawberry Filling

07 - 4 cups fresh strawberries, hulled and sliced
08 - 3/4 cup granulated sugar (150g)
09 - 2 tablespoons cornstarch
10 - 2 tablespoons lemon juice

# Instructions:

01 - Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan and line with parchment paper. Set aside.
02 - In a large bowl, mix the flour, sugar, salt, and baking powder until well blended. Cut in the butter with a knife or pastry cutter until the mixture resembles coarse crumbs. Alternatively, place everything in a food processor and pulse until just combined.
03 - Stir in the oats then remove 1/3 for the crumb topping. Press the remaining crust mixture evenly into the prepared baking pan and bake for 10-12 minutes. Remove from the oven and set aside.
04 - In a saucepan, combine half of the sliced strawberries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until thick, about 10 minutes. Stir in the rest of the fruit, remove from the heat, and let cool slightly.
05 - Spread the strawberry filling evenly over the pre-baked crust, sprinkle the crumb topping evenly over the strawberry filling, then bake again for 30-35 minutes, until lightly browned on top.
06 - Let the bars cool completely in the baking pan. Then, lift them out gently, slice, serve, and enjoy.

# Notes:

01 - Chill the crust for at least 30 minutes to achieve a more tender, flaky texture.
02 - Use ripe, fresh berries for the best results. Slightly mushy berries can be used since they’ll be cooked.
